Marquis Wheat Wholegrain Flour
From my dear friends at Our Heritage Wheat Company, this wheat is grown, harvested and stone milled in southern Alberta.
Marquis Wheat is a descendant of Red fife, and a precursor to modern hard Red Winter wheat, which makes it most suitable for bread, but it makes excellent cookies and pastry as well. I love it for the sweet, molassesy flavour it brings to sourdough bread.
