Wren Bakehouse was founded in 2023, but the idea behind it had been taking shape for years. After working for a decade as a barista in specialty coffee, I became fascinated by the concept of terroir—the way land, climate, and the expertise of the farmer can influence the flavour of a product.
Specialty coffee introduced me to the importance of knowing where ingredients come from and how they’re grown. That same mindset inspired me to do something similar with Alberta's grains, highlighting the unique characteristics of our local wheat. (For example, did you know Alberta is home to one of the northern-most wheat growing regions in the world?) I began building relationships with a select few Albertan wheat farmers and millers whose offerings best reflected these ideals and the result was sourdough bread with incredible flavour.
The vision behind our bakery is simple: we want to connect Albertans with the flavours of their home. The prairies, foothills, and mountains all contribute something special to Alberta's culinary identity, and we aim to celebrate that. Our goal is for people to feel a sense of pride in the food they eat, knowing that it comes from their own backyard. Through our bread and pastries, we want to help people experience the distinct flavours that make Alberta’s food culture truly unique.
We believe that food should not only taste good but also reflect where it comes from.
